Red Or Green? That’s The Question.

All states have a state flower, state bird etc. Here in New Mexico we also have a state question. Red or Green, chili that is.

Food is such an important part of the culture here (which is one of the reasons I moved here) people have knock down drag-outs over the simple question red or green.

Now depending on where you live or where you grew up that may sound a bit strange to you. But believe me when I say that folks are passionate about their food here in the southwest.

Whats that you say? Which is my favorite? Well I’ll have to cop-out and say that all depends on what’s cookin of course. Now before you give me a hard time over that let me explain a little.

Take a traditional Stacked Enchilada Dinner for example. It just wouldn’t taste right unless it’s made with red chili. But on the other hand, a Rolled Chicken Enchilada with Queso Sauce better be made with green chili if you don’t want to get run out of the state.

So maybe it’s not such a simple question after all. So which one is your favorite? Not really sure yet? Keep an eye on this blog for some recipes using each one. Try them out and I promise it won’t take long to find your answer to the question Red or Green.
