Green Chili Porcupine Meatballs
Porcupine meatballs are a favorite comfort food of mine. However, when we add some Green Chili (which I can never seem to get enough of) it completely changes the flavor and gives them sort of an attitude that I think you’re gonna love…
- 1 lb ground beef
- 1 small onion - chopped fine
- 4-5 fresh green chilies or one can of chilies from the store.
- 2 eggs slightly beaten
- 2 cans cream of mushroom soup (remove 3 tablespoons to add to meat mixture)
- 1 cup cracker crumbs
- 5 cups of cooked rice (remove 1 cup for meat mixture
- 1½ soup cans of milk
- salt & pepper
Mix together beef, onion, chili, eggs, milk, 3 tablespoons of soup, cracker crumbs, 1 cup of rice and add salt and pepper.
Roll into balls about 1½ across. Then cook in a
large non-stick skillet When the meatballs finish cooking, drain off excess fat.
Mix soup with 1½ cans of milk. Pour over the meatballs and simmer approximately 30 minutes or until gravy has cooked down and thickens.
Serve over the remaining rice. Enjoy! For a little texture change, serve them over mashed potatoes.
