Green Chili & Chorizo Scrambled Eggs
If you have read many of my recipes, there’s no doubt in your mind that I love Green Chili. With that in mind, I’d like to share one of my favorite breakfast scrambles with you…
This recipe will feed 4 to 5 people.
- 6 large eggs
- 2 tablespoons half & half
- 1 small onion - chopped fine
- 1 can of green chilies - chopped
- 2 tablespoons butter
- 1 chorizo sausage - outer casing removed and diced
- 1 cup shredded cheddar cheese
- ¼ teaspoon of garlic powder
- salt to taste
In a mixing bowl, combine the eggs, half & half, garlic powder and salt. Wisk briskly and set aside.
In a large skillet melt the butter and cook the onion until tender and clear. Turn heat to low and add the chorizo and green chilies. Cover and let steam for 5-8 minutes until the chorizo is tender.
Turn the heat to medium and add the egg mixture. Cook, stirring constantly until done.
Top each serving with the shredded cheese. Serve with tortillas or toast. Place a few avocado slices on top for an extra treat if you have them. Enjoy!
