Green Chili and Corn Casserole
This southwestern Green Chili and Corn casserole makes a tasty meal on its own or as a side dish with chicken, pork chops or even a roast. The part I like is how quick it is to throw together. This is a good one to do with the kids.
- 1 pkg prepared stuffing mix (I call it cheaters stuffing)
- 1 small can of whole kernel corn
- 1 large can of chopped green chili or fresh if you have it.
- 1 jar of Hot cheese dip mixed with ½ cup of milk
- 1 cup of grated cheese (pepper jack will give it some kick)
- 1 tablespoon of dried parsley
- 1 lb ground meat (cooked and drained) or an equal amount of leftover chicken-beef or pork.
- Salt and pepper to taste.
Preheat your oven to 350°
Prepare the stuffing per label directions. Place half of it in an 11 X 7 baking dish that has been sprayed with non-stick spray.
Layer the corn, green chili, meat and about ¼ of the cheese dip over the dressing. Spread the rest of the dressing on top. Spread the cheese dip evenly and top with grated cheese. Bake for 30 minutes. Enjoy!
